Dark Chocolate (85%+)

Cocoa flavanols are among the few 'indulgences' with real evidence — for vascular function and blood pressure. The benefit rises with cocoa content and falls with sugar; at 85 %+ the balance tips positive.

Also known as: kakao, dark chocolate, cocoa, zartbitterschokolade

Perspective critique des lectines.

Yes list

Gundry explicitly recommends dark chocolate — from 72 %, ideally higher, and as low-sugar as possible. He views cocoa polyphenols as a valuable addition and cites chocolate as one of the 'permitted pleasures' in his program.

Cocoa is one of Li's showcase examples: he explicitly names dark chocolate as a food that both modulates angiogenesis and — in his words — raises circulating stem cells (regeneration). The flavanols also feed beneficial gut bacteria.

Modérée

Meta-analyses consistently show a slight blood-pressure reduction and improved vascular function from cocoa flavanols; the large COSMOS trial found a trend toward lower cardiovascular mortality. Framing: the effect comes from the flavanols, not the sugar or fat — 10–20 g of an 85 %+ bar delivers the benefit, a whole bar mostly delivers calories.

Comment utiliser

10–20 g daily, at least 85 % cocoa. The higher the cocoa content, the more flavanols and less sugar. Heavily alkalised ('Dutch-processed') cocoa loses much of its flavanols — prefer minimally processed varieties.
